Colour:
A bright amber-coloured gold with a slightly reddish tinge - more intense than classic blossom honey, but lighter than forest honey. In sunlight it develops a warm, almost copper-coloured depth. The colour can vary slightly depending on the thyme content and region.

Medium-thick to viscous, with a silky viscosity.
Thyme honey crystallises relatively slowly - and when it does, it crystallises finely and evenly, which indicates high quality and pure origin. Its structure remains stable for a long time - perfect for spooning or spreading.

Flavour & aroma:
Characteristically intensely spicy, almost balsamic. The aroma is reminiscent of dried thyme, Mediterranean herbs and warm summer air over rocky slopes.
There is a hint of resin, wild flowers and essential oils on the nose.
