FIR-”VANILLA” Honey - A honey like a myth: rare, mild and full of depth.

FIR-”VANILLA” Honey - A honey like a myth: rare, mild and full of depth.

This exceptional honey comes exclusively from the high-altitude forests of the Mainalo Mountains in Arcadia, in the Peloponnese. This is where the endemic Greek fir tree (Abies cephalonica) thrives, from whose honeydew the bees extract one of the rarest and finest honeys in Europe - with a natural vanilla-caramel flavour that gives it the name ‘Elato Vanilia’ (fir-vanilla).
The fir vanilla honey is harvested between the beginning of May and mid-July and is known for its flavour and low sugar content.

Characteristics:

Colour:
An elegant, light brown to copper-golden honey, often with a pearly lustre - a distinguishing feature of this particular region of origin. The colour is lighter than other fir honeys, a sign of its purity and mineral structure.

Consistency:

Dense to syrupy, with a silky texture.
Thanks to its very low glucose content, this honey remains liquid for an extremely long time - often for years - without crystallising.

Flavour & aroma:
Delicate, noble and complex.
The fragrance unfolds with fine resinous nuances, a hint of beeswax, fresh bark - and a naturally vanilla-like, mildly sweet note reminiscent of dried flowers and forest floor after summer rain.

Flavour profile:
- Entry: Subtly sweet, soft and round
- Heart: Delicately resinous, with a creamy texture and vanilla undertone
- Finish: Long-lasting, balsamic and mineral-noble
→ No bitter aftertaste, but a gentle, woody mouthfeel with exceptional harmony
A honey that is defined by finesse rather than force - for connoisseurs and gourmets.

Health benefits:
- Rich in calcium, magnesium, potassium & iron
- Antibacterial and anti-inflammatory - supports the immune system & mucous membranes
- Low sugar content - suitable for conscious nutrition
- High enzymatic content - promotes digestion & cell protection
→ Studies prove it: Vanilla fir honey from Mainalo is one of the most mineral-rich honeys in Europe.
